And as you sink the spoon all the way to the bottom, the citrus jus brings freshness, vibrancy and complexity, revealing the whole dish. It is hard to pinpoint exactly which citrus fruits were used: lemon, orange, mandarin\u2026 perhaps a hint of mango or passion fruit? One thing is certain: the balance is perfect. The execution is careful, the texture pleasant, the flavours well defined. However, despite the controlled technique, the whole felt just slightly lacking in punch. While a small part of the meat proved slightly firm\u2014no doubt due to the cut itself\u2014the overall result remains convincing. The <\/span><b>meat jus<\/b><span style=\"font-weight: 400\">, tasty, perhaps deserved a little less salt.<\/span><\/p>\n<p style=\"text-align: justify\"><span style=\"font-weight: 400\">The garnishes, on the other hand, are impeccable: a melting <\/span><b>glazed carrot<\/b><span style=\"font-weight: 400\"> and a <\/span><b>red-wine confit onion<\/b><span style=\"font-weight: 400\">, full of flavour. A light, fruity, not-too-sweet plate, where each element finds its place. The balance is spot on, the freshness welcome. The menu evolves regularly, giving pride of place to <\/span><b>local, seasonal produce<\/b><span style=\"font-weight: 400\">, with a genuine desire to tell the story of Provence and the Mediterranean through the plate. You find this identity in the herbs, citrus, vegetables, precise cooking and pairings that echo the surrounding terroir.<\/span><\/p>\n<p style=\"text-align: justify\"><span style=\"font-weight: 400\">When we visited, it was the month of <\/span><b>October<\/b><span style=\"font-weight: 400\">, and the menu naturally took on <\/span><b>autumnal<\/b><span style=\"font-weight: 400\"> notes: seasonal mushrooms, more comforting dishes, enveloping textures. Warm, reassuring cuisine, perfectly in tune with the time of year.<\/span><\/p>\n<p style=\"text-align: justify\"><span style=\"font-weight: 400\">The restaurant also offers, depending on the season, specific menus. At the moment, a <\/span><b>truffle menu<\/b><span style=\"font-weight: 400\"> particularly catches my eye\u2014a proposal that promises an even deeper immersion in the terroir, and one I am very keen to discover on a future visit.<\/span><\/p>\n<p style=\"text-align: justify\"><span style=\"font-weight: 400\">This seasonal approach clearly makes you want to come back, especially in <\/span><b>spring or summer<\/b><span style=\"font-weight: 400\">, to discover a completely different side of the cuisine. All the more so as the house has a <\/span><b>terrace open for part of the year<\/b><span style=\"font-weight: 400\">, offering a <\/span><b>superb view over the rooftops of Uz\u00e8s and its emblematic architecture<\/b><span style=\"font-weight: 400\">.
