The objective was simple: to demonstrate that it is possible to create dishes worthy of a fine dining restaurant using quality ingredients that are easy to find in any supermarket. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Each participant received a booklet with the recipes explained step by step, while the chef shared all the little tips that make the difference. On the other, a salad made with avocado, sweetcorn, roasted carrots, young coriander shoots, lime and a touch of jalape\u00f1o, topped with lightly cooked prawns. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">I particularly enjoyed the balance between the richness of the velout\u00e9 and the fresh, Mexican-inspired flavours of the garnish.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">A special mention goes to the young coriander shoots. As someone who doesn&#8217;t usually enjoy coriander, I discovered a much more delicate, subtle and pleasant version. <\/span><\/p>\n<p>[\/et_pb_text][\/et_pb_column][\/et_pb_row][et_pb_row column_structure=&#8221;1_2,1_2&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221;]<\/p>\n<p><span style=\"font-weight: 400;\">This was my favourite dish of the workshop.<\/span><\/p>\n<p>Kinilaw is often described as the Filipino version of ceviche, but Jordi Grau&#8217;s interpretation had a true identity thanks to its coconut milk &#8220;tiger&#8217;s milk&#8221;, made with freshly squeezed lime juice, ginger and coriander.<\/p>\n<p><span style=\"font-weight: 400;\">It was served with marinated red tuna, crispy corn, spring onion, roasted sweet potato and sweet La Vera paprika oil.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Every bite combined freshness, sweetness, acidity, crunch and indulgence in a beautifully balanced way.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Without hesitation, it was my favourite dish of the demonstration and the one I am most excited to recreate at home.<\/span><\/p>\n<p><b>Be sure to read my article about the Michelin-starred restaurant Ibaya, where Jordi Grau showcases his talent alongside Francis Paniego through an exceptional tasting menu (coming soon).<\/b><\/p>\n<p>[\/et_pb_text][\/et_pb_column][\/et_pb_row][et_pb_row column_structure=&#8221;1_2,1_2&#8243; Wine workshop, led by Judith (@listentoyour_art) and Susana (@wine_susana_sommelier).<\/p>\n<p>The concept is as simple as it is original: express your creativity by painting a watercolour while tasting two carefully selected wines from La Parellada.<\/p>\n<p><span style=\"font-weight: 400;\">Far from seeking artistic performance, this workshop is above all an invitation to slow down, connect with others and enjoy the moment.
