Teriyaki Beef Stuffed Cabbage

I love reinventing comfort food with a little original twist, and this recipe is the perfect example. These beef stuffed cabbages are tender, full of flavour, and the sauce made from the cooking juices, enhanced with maple syrup and teriyaki sauce, takes the dish to the next level. A warm, easy-to-make recipe that’s perfect for a comforting homemade meal.

    Ingredients

    For the stuffed cabbage

    • 1 large green cabbage
    • 500 g (1.1 lb) ground beef
    • 4 carrots
    • 2 spring onions
    • 1 shallot
    • A few sprigs of parsley
    • 750 ml beef stock
    • Olive oil
    • Maple syrup
    • Salt
    • Pepper

    For the sauce

    • The cooking juices
    • 1 tablespoon maple syrup
    • 1 tablespoon teriyaki sauce
    • 1 tablespoon starch diluted in a little cold water
    • A drizzle of sesame oil

    Method

    1. Prepare the cabbage

    Carefully remove the large cabbage leaves without tearing them. Blanch them for 3 to 5 minutes in a large pot of boiling water to soften them. Drain them carefully and leave them to cool.

    2. Prepare the filling

    Peel the carrots and shallot, then finely slice the spring onions. Grate the carrots or finely dice them, depending on your preferred texture.

    In a large bowl, combine the ground beef with the carrots, spring onions, shallot, chopped parsley, salt and pepper. Mix well until you obtain an even filling.

    3. Assemble the stuffed cabbages

    Place a little filling in the centre of each cabbage leaf. Fold in the sides and gently roll to form neat stuffed cabbages.

    Arrange them in an ovenproof dish or casserole.

    4. Cooking

    Pour the stock into the bottom of the dish. Drizzle the cabbages with olive oil and add a light drizzle of maple syrup over the top.

    Bake at 180°C (350°F) for 40 to 45 minutes. The cabbages should be tender, fully cooked and lightly golden on top.

    5. Prepare the sauce

    Once cooked, collect the cooking juices and pour them into a small saucepan.

    Add the maple syrup, teriyaki sauce, diluted starch and a drizzle of sesame oil. Heat gently while stirring until the sauce lightly coats the back of a spoon.

    Spoon the sauce over the stuffed cabbages just before serving.

    My Tips

    To make the cabbage leaves easier to work with, don’t skip the blanching step. It’s the key to achieving a neat result with perfectly tender cabbage.

    The drizzle of maple syrup before baking helps caramelise the top slightly and adds a delicious finishing touch.

    For an even heartier version, you can add a little cooked rice to the filling.
